But this is a show about dementia? I am happy to share with you a recipe by "thevegansclub." It is for Freezer Cookie Dough Bites, but I have chosen to call them "Happy Freezer Cookie Balls." And, get this, they are good for you! I am limiting myself to one day! Here is the recipe. (I changed the sweetener in this recipe to monk fruit with erythritol.) They are very hard when they come out of the freezer, but they soften within about two minutes. 2 tablespoons ground flax seed mixed with 1/4 cup water 1/3 cup monk fruit with erythritol 1/2 cup peanut butter 1 teaspoon vanilla 14 cup almond milk 1 1/2 cup almond flour 1/2 cup oat flour 1/4 cup cacao chips Soak the flax seed in water and set aside. Combine remaining ingredients. Add in flax seed. Scoop 1 heaped tablespoon onto a parchment lined baking sheet. Repeat until all the batter is gone. Freeze. Store in a ziploc back in the freezer. YUM! |
