Asparagus Salad

1 bunch asparagus, hard stems removed, washed and cut into thirds
3 cups spinach
1 cup cherry tomatoes, cut into thirds
1/2 - 1 cup edamame
1/2 red onion chopped small
1/2 - 1 cup plant-based feta cheese
Lemon Vinaigrette
1/4 cup olive oil
juice of one lemon (about 3 tablespoons)
2 tablespoons apple cider vinegar
1/2 teaspoon Sweet Leaf Liquid Stevia.
In large pot, bring the asparagus to a boil for 3 minutes. Remove to an ice bath to cool. Add the edamame to the boiling water for three minutes and add to the ice bath with the asparagus.
In a large bowl, toss remaining salad ingredients with the asparagus and edamame.
In a separate bowl, mix the dressing ingredients. Pour over salad. ENJOY!
